Coconut Cherry Cupcakes
Sweet strawberries are delicious with this coconut cake frosted with a light cream cheese frosting. Immediately after I baked it and trimmed the tops, it was moist and soft (and delish), but following refrigerating the cake portions overnight, the cake was dense (but nevertheless delish). This is a great base cake for a lot of diverse flavors, and certainly my new go to! I loved them, my children loved them, and all of my coconut cake-addicted friends loved them.
It really is the combination of the tallness and the smallness of the cake and the big flakes that make this cake work visually. Refrigerate for at least 45 minutes prior to cutting or else the cake could fall apart as you reduce. Her birthday party is in two weeks so I’ll make those if your recipe isn’t out by then.
