You can store home made fruit cake for years although the type you buy is not usually stored for that long, because, after all it has a sell-by date, and has additives and preservatives in it. You can, however, prolong the life of a fruit cake from a store, by simply freezing it after wrapping it in tin foil very securely.

The best sorts of fruit cake to store are the ones you make yourself that are laced with liquor, brandy, dark rum, whiskey, wine and port make good choices. When you make a fruit cake it takes at least a month to mature, or mellow, so you shouldn’t freeze one until it has been allowed to mellow for a few months.

When you make a fruit cake, you should make it three or four months before you want to eat it as this gives it time to reach its full flavour potential. If you just want to keep it for a few months, store it in an airtight tin such as an old biscuit tin, and once a month, or every six weeks. Add more liquor to the cake, by piercing it in a few places and pouring the liquor over the top of the cake and leaving it. The liquid will slowly seep into the cake and the flavour will be superb when you are ready to eat it.

Recipe for Old Fashion Icebox Banana Cake

What You Need :

  • 1 cup of sugar
  • 2/3 cup softened butter or margarine
  • 2 teaspoons vanilla
  • 2 eggs
  • 2 medium ripe mashed bananas
  • A cup sour cream
  • A cup all-purpose flour
  • 1 teaspoon baking soda

How to Make It

Preheat oven to 350 degrees Fahrenheit.

Prepare two, 9-inch round baking pans by greasing and flouring and then set aside until needed.

Using a large mixing bowl combine the sugar, butter or margarine and vanilla and beat on low speed for about 1 to 2 minutes or until fluffy and light.

Continue beating, while adding one egg at a time for about 1 or 2 more minutes or until creamy in texture. Stir in the bananas, sour cream, and then fold in the flour and baking soda.

Pour into prepared baking pans and place in the oven to bake for 20 to 25 minutes or until done. Check by inserting a wooden toothpick into the center of cake until it comes out clean. Allow for cooling about 5 minutes and then remove from pan and set aside to cool completely.

Quick Banana Cake for Dinner Parties

What you will need:

  • Peeled and mashed ripe bananas – 1 cup
  • Plain yellow cake mix – 1 packet
  • Light brown sugar – 1/2 cup packed
  • Ground fresh cinnamon – 1 teaspoon
  • Vegetable oil – 1/2 cup (to keep the cake moist)
  • Large eggs – 3
  • Water – 1 cup
  • Roasted nuts (such as cashews, pecans, almonds, pistachios etc) – 1 cup
  • Vegetable shortening and some all-purpose flour for greasing and dusting the cake tins

Preparation:

  • Grease two 8 or 9 inch cake tins using the vegetable shortening and the flour. Make sure that you cover all the sides of the cake tins.

  • Mix the yellow cake mix and brown sugar in a mixing bowl.
